The apple, for excellence, which come from the Campania regione revived in some classical pastry preparations: cheese cake with taleggio di bufala (soft cheese made with buffalo milk), sorbet, tatin and hot pancakes.
The video shows the peculiarity of the “Mela annurca” , which is picked and put to ripen in “melai” (place where apples are kept until ripe) protected by shading nets. The apples are turned over periodically to ensure a full light exposure.
